Baked Pumpkin Spice Sweet Potato Fries


Ingredients

3 small to medium sweet potatoes

2 tablespoons avocado oil 

1/2 teaspoon sea salt

1/2 teaspoon garlic powder

1/4 teaspoon cumin

1/4 teaspoon pumpkin pie spice

A couple pinches of cayenne pepper

 

Yogurt Dipping Sauce:

Coconut kefir yogurt

Sprinkle of pumpkin pie spice

Directions

1. Preheat the oven to 400˚ (F) and line a large baking sheet with parchment paper.

2. Cut your sweet potatoes into fry/wedge shapes and place them in a large mixing bowl.

3. Add the avocado oil and spices to the sweet potato fries and toss everything together until the fries are evenly-coated.

4. Evenly place the fries on the parchment-lined baking sheet (with enough room to breath or so they're not touching--this ensures maximum crispiness!).

5. Bake the fries for about 30 minutes, flipping halfway.

6. Remove the fries from the oven when they're tender on the inside and crispy/golden brown on the outside.

7. Serve hot with some coconut yogurt sprinkled with a desired amount of pumpkin pie spice. 

8. Enjoy!
