Chicken Pumpkin Curry Sliders


Ingredients

1.5 lbs. ground chicken or turkey (or a combination of both) 

1/4 cup canned pumpkin

1 cup almond flour

2-3 tablespoons curry powder (I like the sweet curry powder)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper (optional)

1-2 tablespoons of your choice of oil (I use sesame, avocado, or coconut oil)

Directions

1. Mix all the ingredients together, except the oil, in a large bowl until they are combined.

2. Heat a large skillet over medium-high heat with the oil.

3. Use a large spoon to scoop up a balls of the meat mixture, shaping them into desired-sized sliders.

4. Add the sliders to the skillet to cook.

5. Once the bottom side of the meat has seared and is light brown/crispy, use a spatula to flip it. Mash the patty down a bit to make a flatten it.

6. Cover the pan and let the sliders cook for about 3 minutes or until they are cooked through, making sure to flip the sliders to the other side if they are still not done and one side is getting too crispy.

7. Remove the sliders from the heat and place them on a plate with paper towel.

8. Serve with your favorite condiments and a veggie side (I like to eat my slider with roasted broccoli OR baked/mashed sweet potatoes).
