1/2 cup raw cashew butter
1/2 cup Bob's Red Mill Paleo Baking Flour
1 & 1/2 tsp Bob's Red Mill Egg Replacer mixed with 1 tbsp water
1/4 cup pure maple syrup
1/2 tsp baking soda
1/4 tsp sea salt
1/8 tsp pure vanilla powder (or sub 1 tsp vanilla extract)
Hu Kitchen Chocolate Gems (as many as your heart desires—I chopped mine in half)
1. Make the egg replacer and let that sit.
2. Whisk together the flour, cashew butter, maple syrup, sea salt, vanilla, egg replacer, and baking soda in a small bowl. Then, fold in the chocolate chips.
3. Place dough in the fridge to chill for 30 minutes.
4. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
6. Using a cookie scooper, scoop the dough onto the lined baking sheet, forming balls, and bake them for 10-12 minutes.
8. Remove the cookies from the oven and let them cool for a few minutes on a cooling rack.
