Vegan Cheese Sauce


Ingredients

1 & 1/4 cup white hannah sweet potatoes, chopped into cubes

1/2 cup carrots, chopped into cubes

1 tbsp raw cashew butter 

1 tbsp olive or avocado oil

1/2 tbsp lemon juice

1/2 tsp apple cider vinegar

1/2 tsp sea salt

1/2 tsp garlic powder

1/2 cup water


Directions

1. Steam the sweet potatoes and carrots until tender.

2. Place the rest of the ingredients in a blender and add the sweet potatoes and carrots once they're done. 

3. Blend everything on high until you have a smooth, creamy consistency.

4. Pour over your favorite pasta or veggies, use it as a dip for chips. or eat with anything else your heart desires! 

Notes

I also love putting this cheese sauce over a bison burger and broiling it until it gets slightly browned. So yummy!
